Jose and I were about to watch the 1st World Series game last night and I got a craving for some appetizer finger foods. I had a bundle of asparagus and instantly thought, fries!
Growing up, we never cooked with recipes, we’re Italian. We just cook with love and add stuff until it “looks right”! So that being said, I didn’t exactly measure for this recipe, I definitely eyeballed it.
Feel free to play with it and make it your own. But man, they were delicious!
Ingredients:
- 1 Bundle of asparagus
- 1 egg beaten
- 1 cup of Italian seasoned breadcrumbs
- 1 tsp garlic powder
- Olive Oil and Avocado oil for frying
Aioli:
- 1/4 cup of mayo
- 1 tsp fresh lemon zest
- 1 garlic clove grated
- Salt to taste
Directions:
Beat egg
In a separate bowl, add breadcrumbs and garlic powder
Add oils (1/2 olive oil and 1/2 avocado oil) to frying pan until it’s about 1in deep heat on medium
Roll asparagus in egg to coat
Roll asparagus in breadcrumb mixture to coat
Drop a crumb of breadcrumb in oil, if it starts to bubble right away you are ready to fry!
Place your asparagus in the frying pan, do not over crowd the pan
Fry until golden brown, about 4 minutes
Remove and place on a plate with a paper towel to soak up the excess oil.
Aioli:
Combine mayo, lemon zest, garlic, and salt in a small bowl
That’s it, super easy and delicious! You will definitely impress whoever you make this for!
