This was one of the first meals I learned to make! When I was about 9 years old, I made this marinara served with spaghetti and sautéed zucchini to my Italian family. It was a very proud moment for me. To this day, making marinara makes me feel close to my family. I hope you enjoy it!
Ingredients:
- 2 tbsp extra virgin olive oil
- 1 onion diced
- 4 cloves of garlic minced
- 1 tsp dried basil
- 1 tsp dried parsley
- 1/2 tsp oregano (optional)
- 1 tbsp tomato paste
- 2 cans of whole peeled tomatoes with basil (crushed is ok too)
- 2 bay leaves
Saute Onions in olive oil until translucent
Salt to taste
Add garlic, herbs, and tomato paste, cook for 30 seconds until everything is coated with tomato paste
Crush tomatoes by hand and add with to the pot with the bay leaves
Bring to a boil, then cover and reduce to a simmer for at least 30 minutes
The longer it cooks the thicker and richer the sauce will be.
Tisha’s Tip- You can easily make this a meat sauce. Brown ground meat in olive oil before you add onions, spices, tomato paste.
