We love brunch in our family and Easter is one of the best holidays for it!
I made these pancakes with my daughter and they were a huge hit, they are a tradition for us every Easter now!
Ingredients:
- Food Coloring
- Unsweetened coconut
- Favorite Pancake mix/recipe
- Banana
- Maple Syrup
- Butter
- Marshmallows or whipped cream
- Sprinkles (optional)
Add about a cup of coconut to a baggie
Drop 1 or 2 drops of green food coloring
Shake the coconut to color it to look like green grass

Add pink food coloring to pancake batter
Cook pancakes according to recipe/pancake mix directions
For one bunny:
- One large circle for bottom
- 4 ovals – 2 for feet & 2 for ears
- One small circle for head

Add your coconut grass to the bottom of the plate and sprinkles (optional)
Stack your pancakes to create your bunny, smear butter on pancakes
Add a slice of banana to each foot
Add a dollop of whipped cream or some marshmallows for the tail
Top with maples syrup and enjoy!
