Ingredients:
- 2 Small Sweet Potatoes
- 1/2 of the left over chicken from the soup (reserved in the fridge)
- 1/4 cup BBQ sauce (add more if you like it more saucy)
- 1/2 Avocado
- 1 green onion
- 1 small handful of cilantro
Preheat oven/toaster oven to 425 degrees
Pierce potatoes and place in microwave. Microwave until fork tender- 3-6 minutes depending on size
While potatoes are cooking add bbq sauce to chicken and mix well
Add bbq coated chicken to a lined baking sheet
Heat in toaster oven or oven for about 10 minutes
Remove potatoes once cooked and slice length wise without going all the way through the bottom and open them a bit.
Spoon chicken into the potato and top with avocado, cilantro, and green onions.
Drizzle with a little more sauce if desired.
