I have been trying to get as creative as possible during this quarantine. Not only to have delicious and healthy dinners but to also do them for as little cost as possible!
This marinara sauce is so versatile, I was able to make several different meals for two, 5 days in a row!
Day #1 – Meal #1 – Marinara with Favorite Pasta
Make this Marinara Sauce and serve over your favorite ravioli, pasta, tortellini, etc.
Day #2 – Meal #2 – Roasted Spaghetti Squash Chicken Cacciatore
Pierce all sides of spaghetti squash with a fork and microwave for about 10 minutes
Slice in half, scoop out the seeds
Drizzle with olive oil and season with salt and pepper
Roast cut side up at 400 degrees for about 25 minutes
While the squash is roasting, I added left over roasted chicken legs and about a cup of chicken stock to a pot of about 1/3 of the left over marinara sauce. I brought it to a boil, covered the sauce, and then turned it down to a simmer and let it cook until squash was ready.
Once Squash is golden brown on the top, remove from oven. With a fork, remove squash from skin. Add 1/2 of the squash to a frying pan with about 1 tsp of olive oil and about a cup of sauce. Save the other half of squash for tomorrow’s dinner.
Once squash has absorbed some of the sauce, serve with another spoonful of sauce, the simmered chicken legs and fresh romano or parmesan on top. Enjoy!
Day #3 – Meal #3 – Spaghetti Squash Baked Ziti
Use the reserved 1/2 of spaghetti squash from last night.
Add to individual baking pan, layer with marinara, and fat free mozzarella cheese. I repeated these layers twice and then topped it with a little Italian breadcrumb and fresh grated parmesan.
Bake at 375 degrees until bubbling and golden brown on top
I roasted some asparagus to serve along side this and it was a major winner, delish!
Day #4 – Meal #4 – Spaghetti Squash Pizza “Burger”
Mix the last portion of spaghetti squash, one egg, and a little italian breadcrumbs.
Form into patty’s and cook in avocado oil until crust forms, flip, add some shredded mozz, and cook until crispy.
Serve with Marinara and a little fresh grated parmesan on top.
Day#5 – Meal #5 – Homemade Pizza
And there you have it! 5 days of meals for 2 with one pot of marinara!
